Recipes for Halloween

Supermarket shelves are now filled with pumpkins, monkey nuts and other Halloween related products, mainly sweets. Whether or not you are planning to celebrate the night off all saints, why not cooking something special and seasonal? Carving pumpkins is not only a fun thing to do, it also provides you with a great ingredient, their flesh. In fact, it is even two ingredients since the seeds can be roasted and either eaten on their own or used in bread for example.

Soup and cake

So, keep the flesh that you or your kids have extracted of the pumpkin and use it simply to make a soup. Start by discarding the stringy material at the centre, keep the seeds. Cut the flesh in cubes as you would do for any other vegetable, and fry them with chopped onions. When the onions are coloured, add some stock and bring to boil, before simmering for about 10 minutes. For a velvety soup, add some double cream and bring back to boil. Then blend your soup before serving it with croutons and seeds roasted on greaseproof paper.

If you have lots of pumpkin flesh, or you prefer baking it, try a spiced pumpkin cake. All you have to do is use your favourite carrot cake recipe and replace the carrots with some pumpkin. Top the cake with a Halloween themed icing and you’ll have a great centrepiece for the party!
